This is our modified classic Santoku. Employing full tang construction, this knife is a tried and true classic workhorse in the kitchen. The name "Santoku" means "three virtues" and depending on who you ask, the name either refers to the three types of foods it works with (proteins, vegetables, and fruit) or for the three types of tasks at which it performs exceptionally well, (slicing, dicing, and chopping). Though traditionally designed with a straight edge, our modified Santoku has just enough curvature in the belly, allowing for a slight rocking motion if desired. It also features a full distal taper and flat ground blade with a convex edge for outstanding performance and food release. This knife is an absolute pleasure to use due to the blade being slightly shorter, lighter, and thinner, making it razor-sharp and able to glide through food with great ease.
The AEB-L stainless steel blade is a workhorse in the kitchen and can stand up to the most demanding jobs.
